INGREDIENTS

  • 2 chicken breasts
  • 1 chopped leak
  • 1/4 feta cheese
  • Salt
  • Black pepper
  • 2 tsp olive oil
  • 1 mug Basmati rice
  • 1 chopped small onion
  • 2 small tomatoes
  • 1 tbs olive oil

DIRECTIONS

  • Preheat the oven at 200º C
  • Open the chicken breasts and place them on a foil sheet on the oven tray
  • Season it with a bit of salt, black pepper and olive oil
  • Place the tray in the oven for 10 minutes
  • In a non-sticky frying pan add 1tsp of olive oil and the chopped leak
  • Leave it until the leak gets softer, remove it from the heat and live it to get cooler
  • Remove the chicken breasts from the oven and add the small slices of feta cheese to the leak
  • Place the mixture on top of the chicken breasts
  • Put it back to the oven until the feta cheese leak slightly brown

SIDE

  • In a pan add the chopped onion, 1 tbs olive oil, the chopped tomatoes and a little bit of water
  • Leave it cooking for 15 minutes, until the onion is soft and the tomatoes melted
  • Add the Basmati rice and salt and mix everything for 1 minute to get more taste
  • Add 1.5 mugs of water (same used to measure the rice) and put the lid on top
  • Leave it until it is cooked and dry.
